Odoo Sign now offers a Date field that lets recipients choose a day from a date picker while still allowing custom typed text when needed. Selected dates are saved using the recipient's language date format, making signed documents clearer and more localized.

With this commit, we can use now use an item type 'date' to provide a date picker
to choose a day on the end-user.

Note: It records the selected day formatted with the user's language date format
